- 3 potatoes
- 1 zucchini
- 1/2 onion
- 1 can of canned tuna
- 1/2 tablespoon vinegar or lemon juice
- 2 to 3 tablespoons of mayonnaise
- 1 tablespoon to 1/2 teaspoon ground mustard
- 1/2 teaspoon maple syrup (or honey or paprika)
- 1 pinch of salt and pepper
- 1 pair of capers (to taste)
Steps to make potato salad with lots of zucchini
- Cut the potatoes into manageable pieces and boil them in a little salted water.

- Once the potatoes are cooked, drain them well, add the vinegar (or lemon juice) while they are still hot, replace the pan and shake to distribute the vinegar evenly.

- Chop the onion and put it in a pot of water.

- Cut zucchini into circles.

- Boil a pot of slightly salted water and add a piece of zucchini. When it boils, drain them again and place the zucchini in cold water and drain them again

- Press the onion and courgettes firmly to remove as much moisture as possible. When using, cut the capers. Drain the oil from the tuna.
- Mix the potatoes, onions, zucchini, tuna, mayonnaise, mustard, maple syrup and capers in a bowl.

- At the end, adjust them with salt and pepper.
