Instructions for making pasta salad with garlic, olives and grilled tomatoes
- Heat the oven to 200°C. Cut the top of the garlic bulbs. Pour olive oil, place in the middle of a large aluminum foil and fold to close. Place the package on the baking tray and bake for 40-50 minutes or until the garlic is very soft. Remove it and let it cool down.
- Cook the pasta according to the instructions. Drain and put in a large bowl. Drizzle a little olive oil and let it cool while decorating. Mix the ricotta and buttermilk until smooth and fluffy, then add the whole roasted garlic, removing the soft garlic from each pod. Stir vigorously until garlic is well blended. Add salt and black pepper. Add salt and pepper to taste.
- Pour the ricotta mixture over the pasta and add the tomatoes, olives, and basil. Throw for cover. Taste and add salt and pepper as needed. Serve it a little hot or cold. The texture is best when served immediately, but the garlic flavor improves overnight, so it's still good!
